| Fresh Tomato
& Garlic Soup Ingredients 6 lge tomatoes, peeled & seeded 2 medium onions, finely chopped 20g butter 1 teas grated fresh ginger 4 cloves garlic 2 tbls plain flour 2 cups chicken stock 1 tbl tomato paste 2 teas sugar 1 teas chopped oregano 1 teas chopped thyme 1 tbls chopped parsley Method Blend or process tomatoes until smooth. Heat butter in pan, add onions, garlic, and ginger, cook, stirring until onions are soft. Add flour, stir until combined. Remove from heat, gradually stir in tomatoes, stock, paste & sugar. Simmer uncovered about 15 minutes or until slightly thickened. Stir in herbs. |

Chocolate Almond Torte with Raspberry Coulis (Serves 16) Ingredients 500g dark cooking choc 300g butter 300g castor sugar 200g almond meal 10 eggs, separated Method Grease well, & line the base of, a large (28cm) round cake tin. Combine choc., butter and sugar in a bowl over a pan of simmering water until all are melted and combined. Add almond meal. Beat egg yolks, two at a time, into choc mixture. In a separate bowl, whip egg whites until stiff. Beat 4 tbls into choc mixture, then carefully fold in the rest. Pour into cake tin and bake at 180c until fork comes out clean. Approx 1 1/2 hours. (Mixture can be halved) For coulis, blend 500g raspberries, with 1/2 cup of castor or icing sugar (more if preferred sweet), and the juice of half a lemon. Sieve to remove seeds, if preferred. |
